Let's Go Try Some Crickets!

Chef and owner Nathan Isberg is a big proponent of bug-eating, and he can do some crazy things with them. He buys crickets and grasshoppers when they’re young, and he raises them in a terrarium. He feeds them apples, along with herbs like cilantro, thyme or rosemary. According to him, they start to take on the flavours of what they’re fed. Then, when they’re ready to get gobbled up, he freezes them. It’s a humane way of killing them, he says.

Isberg often serves hay-smoked crickets, which he says taste like almonds. But he’s also served crickets as a purée (“it’s like a protein shake at that point”) and he can also make a flour out of them to use for insect bread or insect pasta (yes, you read that correctly, and the high-protein result, he says, tastes mushroomy and nutty.)

      I am going for the crickets as well, but I know my + 1 won't eat them :s It's ok though, the menu and restaurant is captivating enough without the crickets. I implore everyone reading this to check out the restaurant's website and see what they think. It is definitely worth a try and even the $35 is a guess, you don't have to spend that much, or that little, if you don't want to.
