Thanks for the question Baron! The simple response is leafy green goodness. In Jamaica it is strictly a spinach-like plant that's is prep'd much the same way but tends to be a little sweeter and less delicate (+ of onions, tomatoes, and cured cod is as complicated as it gets). Elsewhere in the Caribbean though, callaloo is a veritable concoction of sorts typically made from hardier taro-like leaves and is a more involved stew/soup dish with a representative from many food groups.
