This saturday we are having a THAI SPECIAL at 8 PM ! (until 11 PM)

News :
Our Friend Denis Ducasse got back a couple of weeks ago from Thailand.

This saturday , May 4th ; 8 PM he proposes :

"THAÏ BUFFET" : (recipe from the Chef of the Hotel Phuket Mai Khao Beach)

English :

 

1- To start out with : TOM YUM G00NG (one of the most famous Thai Dishes) thaï shrimp,  champignons cooked in a citronella perfumed bouillon, Kaffir leaves, coriandrer, galanga, bird chili et spices (not too hot !)

 

2- Gang Massamun Nuea (Main Dish)= this is a ragout type dish with beef or chicken in coco milk and patatoes previously cooked in chicken juice. the whole dish is perfumed in cardamon beef, or chicken cooked in coco milkwith patatoes previously cooked in poulty juices. The dish is perfumed with cardamon, cinamon sticks, and Tamarind juice. It is also spiced up with "MASSAMUM CURRY PASTE"

 

3- Desert = Thaicream with cocomilk and orange cake.

Je propose de préparer un "THAÏ BUFFET" : (recettes apprises lors de mon récent séjour en Thaïlande avec le Chef de l'hôtel Phuket Mai Khao Beach)

1- Pour commencer : TOM YUM G00NG (l'un des plus célèbre plat Thaï) crevettes thaï, et champignons cuits dans un bouillon parfumé à la citronnelle, feuille de Kaffir, coriandre, galangal, bird chili et épices bien sûr (avec modération)

 

2- Pour poursuivre : Plat = Gang Massamun Nuea = Il s'agit d'un plat cuit "comme un ragoût à blanc"  Il s'agit soit de cubes de viande de boeuf, ou de poulet cuits dans du lait de coco, avec des pommes de terre cuites au préalable dans un bouillon de volaille. Le tout est parfumé à la cardamone, bâton de cannelle  et relevé avec une sauce "TAMARIND JUICE" et épicé avec la "MASSAMUM CURRY PASTE";

 

3- Pour terminer : Le dessert = Thaicream au lait de coco et cake à l'orange.
