Carrot-Apple-Cabbage Slaw w/ Ginger-Mint Dressing

SALAD -

(1) small head of cabbage, shredded
(4) medium carrots, shredded
(3) medium sized apples, shredded
handful of fresh mint leaves, coarsely chopped

DRESSING -

1/4 cup vegetable or nut oil of choice
3-inch piece of ginger root, peeled & minced
juice of 2 limes
juice of 1 lemon

Toss cabbage, carrots & apples with the lemon & lime juices together. Blend the oil & ginger root together into a thick emulsion and toss with slaw. Refrigerate until ready to serve. Toss with fresh chopped mint leaves before serving.

Variations:

* Add in fresh garlic, onions &/or scallions to add a savory kick
* Replace any of the slaw ingredients with fresh, sliced fennel
* Use peanut oil or add a bit of sesame oil for a nutty flavor
* Rice wine vinegar can be used in place of citrus juices
* Replace mint leaves with fresh cilantro
