Gnocchi, in Italian cooking are dumplings made of potato, semolina, or flour, usually boiled and served with soup or a sauce.

Gnudi is a type of gnocchi made from ricotta cheese and a little bit of flour. The result is a dumpling that some describe as "nude" ravioli, or filling without the pasta — that is to say, light, fluffy, and creamy.

Come learn how to make this special treat from Brent who has volunteered to demo this for us.
