Essentially, we’ve assembled some of the city’s top meat masters for a panel discussion on the flavors and impacts of using all parts of the animal, including top chef at Incanto Chris Cosentino, wonder woman of butchery Tia Harrison, 4505 Meats’ Ryan Farr and John Fink of The Whole Beast.
After the talk we’re heading over to the CUESA Kitchen for the fun part - complete with a whole animal butchery demo from David Budworth (the iconic Dave the Butcher) and nose-to-tail dishes and drinks from local favorites like Biagio Artisan Meats, Magruder Farms, Harley Richter Meats, Avedano's, The Whole Beast, and more.
