I can't choose just one so here's my short list: Any Madre bar with Hawaiian beans, Guittard Tsaratana, Maglio Cuba, Amadei Toscano Black, and Amano Jembrana are my current favorite bars. As for truffles, it's Gail Ambrosius' Adventurous collection any day... or night.
Hi. I'm Maya, the former group organizer and great lover of chocolate.
It was a hard-core meeting! We sampled three kinds of 100% chocolate in hopes of improving our palates. We tried Domori's 100% Criollo, Domori's 100% blend, and Pacari's 100% Raw. Pacari was our favorite. To ease our tongues after the intensity of the 100%s, we also sampled three 70% bars: Potomac San Martin (Peru), Dandelion Patanemo Venezuela, and Patric Signature Blend. Of these, we found the Dandelion and Patric to be most interesting and tasty.
