Hailing from Cameroon, Chef Njike's fine dining background includes stints at Charlie Trotter's, the Peninsula Hotel, NoMI and Park 52. He is hosting a tasting menu for us, as follows:
Grilled romaine marinated in lemon and lime , seasoned with Babou salt and Penja pepper, slowly grilled over open fire and dressed with housemade Sanon dressing.
N’dole Plantain: Cameroonian style sautéed greens with peanut milk, plantains
Far West Africa: Penja blackened snapper, western corn, crawfish ragout (Signature Dish)
Roasted Chicken: Penja blackened chicken breast, Bamileke garlic roasted mashed potatoes
Soya Beef: Roasted beef marinated with African Soya pepper, Bamileke garlic roasted mashed potatoes
Dessert - Choice of:
Egyptian Traveler: House-made Key Lime yogurt, couscous
Bouye & Beignets: Baobab fruit puree, fried beignets
Soft Drinks, Coffee and Tea Included
