A Going Away Party

Two of BHF's original and very active members, Edgar and Joane Metums, are moving back to their home city of Montreal.  Happy for them, sad for us! 

They have hosted many events, always sharing their knowledge of SE Asian cuisine's and culture, welcoming us with big smiles, and of cause clowning around and making us laugh. 

We will bid farewell to these two very special Foodies by having a party night to celebrate the good times together and wishing them all the best.

We will go to Bo Bo Garden which is one of their favorite BH restaurants. They have said it reminds them of the delicious fresh food they had while living in Hong Kong. It was also the first place that Edgar hosted a Meetup for BHF.

For their grand finale, they'll order authentic Cantonese dishes for all of us to enjoy, as they have done in the past. We will do family style and split the bill. Figure $15 -20 per person, including tip and tax.  

After dinner we'll continue the celebration with drinks and dancing at the  57th Fighter Group Restaurant.

    Caramel cont.

    If you pass the temperature and the caramel becomes dark, it is burnt and you will need to start over.

    If you have not passed the temperature then start slowly adding the heated cream to the caramel while stirring. Be careful as the cream entering the caramel can sometimes erupt.

    The temperature will now lower. Replace the pot to the stove and continue stirring until you reach a temperature of 225F.

    Let the caramel chill until 86F - 104F at this point stir in the whipped butter with a wooden spoon. Add the salt if needed. Fill the jars cap and conserve in your refrigerator.

    Uses:

    Spread on toast, or toast with peanut butter, top dark chocolate and enjoy, top fruit salad or Ice cream. Or just take a spoonful and slowly lick it savoring the creaminess.

    The food was great! Edgar and Joane, thank you for selecting food that was such a delightful feast. It was good to see familiar faces and to meet some new people too. The dancing was fun. I suppose the DJ needs to become accustomed to the foodies' request for "What the Fox Says." Thanks, DaveO, for organizing and for others who helped make this a fond farewell to Edgar and Joane.

    Spreadable Quebec Caramel

    This recipe that is so rich and smooth makes a everything a good thing.


    Makes 5 jars of 8 oz each:

    Ingredients:

    2 cups of sugar (either white or brown)
    1/2 cup of white corn syrup
    3 1/2 cups of cooking cream 35% heated with out scalding.
    3/4 lb of whipped salted butter
    2 tsp of Fleur du sel or Guerande (sea salt that is flakey)

    Preparation:

    Fill the bottom of your sink with cold water. 1-2 inchs.

    In a thick bottom 5 quart pot with high sides mix the sugar and syrup.

    Cook the sugar and syrup at medium heat while stirring until you reach a temperature of 365F using a candy thermometer.

    If needed remove the pot from the heat so as to slowly reach the temperature and do not pass it, as doing so will burn the caramel. Once attaining the temperature, quickly place the pot with the caramel in to your sink with cold water momentarily to stop the cooking process. While not too long as it will turn into hard caramel.

And thanks to the staff at BoBo's who did a fantastic job in the meal. I didn't see too many plates left full on the tables.       Hope that you feel better soon! The rule is two no-shows (which includes cancellations in the last 24 hours) in six months, so you're not out yet. ;) We don't actually suspend memberships. The penalty is permanent removal from the group.

    Hey DaveO,

    Would it be possible, or appropriate, for us to bring some bottles into BoBo Garden? Might be fun to have some bubbly with our Cantonese? Last time I was there they had let their license "lapse" or something ... they might be amenable. Just thought I'd ask your opinion. I'm really looking forward to Friday.
