Before offering my home, etc. I want to go to a couple of these first, but I am fully on board to contribute something to a French pot luck!

Regarding French cuisine, there is wonderful provincial French food from the countryside--things like ratatouille, coquilles san jacques (scallop dish), tomato-cheese pie, souffles, quiche, stuffed crepes, french onion soup, bouillabaise. pot roast in red wine, and more. I have a favorite chocolate pear custard pie that is to die for! Then there is Classical French at the base of which are lots of fine meat stocks, things like eggs in aspic (say what?), pheasant pate in pastry crust, cream puffs and pastries, etc.

Vive la France!
