Monthly Vegan Potluck at Earth Fare

Join us for our monthly vegan potluck the first Wednesday of each month at Earth Fare.  Bring your favorite vegan dish that will feed about 12 or so people and an empty stomach. Lots of good food and conversation guaranteed! We'll be in the cafeteria section of Earthfare starting around 7:00 p.m.

    Here's the original recipe for the
    Chia Quinoa Kheer (Quinoa Pudding) Ingredients: yields 2 cups

    Prepare cooked quinoa:

    1 cup cooked quinoa
    2 cups almond milk Add in:
    3 Tbsp raw agave syrup or 1 tsp liquid stevia
    1/2 tsp vanilla extract
    1 Tbsp chia seeds
    3 Tbsp chopped almonds
    3 Tbsp chopped pistachios
    3/4 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/4 cup raisins
    Coconut or almond cream

    Cook ~ Rinse 1 cup quinoa till water runs clear. Combine milk and quinoa in a medium-sized saucepan. Bring to a boil over high heat. Reduce heat to low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat and let stand covered 5 minutes.

    After cooking, stir together the agave, vanilla, chia seeds, almonds, pistachios, cinnamon, nutmeg and raisins. Add the desired amount of coconut or almond cream. In as little as 30 minutes or so the chia will have absorbed all the liquid and you’ll have a pudding. Top with additional nuts and raisins if you wish.

    Hi Everyone. Sorry to rush out last night, but it was so great to see everyone. What a great group! Here is the Chocolate Mousse recipe from my friend Linda. 4 Ingredient Chocolate Mousse Ingredients:

    1 teaspoon vanilla extract
    1 package silken tofu (Non refrigerated kind, in a aseptic container)
    1/2 cup soy milk
    1 cup vegan chocolate chocolate chips Blend tofu in a blender or food processor until very smooth. Add the milk and the vanilla extract to the smooth tofu, and blend to mix. Add the melted chocolate, and blend to all the ingredients are together. Chill, and Enjoy
