Designing Software for Accessibility

How do you provide alternate software interfaces that create an assistive experience for users with visual and/or auditory, impairments, physical- or motor skill-related challenges (with conventional interface devices), and literacy or learning disabilities?

    I'd love to go to this, however, the one course I've taken on accessibility says that provding "alternative" interfaces is bad practice. The "one and only" interface needs to be designed to be accessible.
