Which breads have you baked?

Basic french bread, Neapolitan style pizza, bread rolls with various fillings.

Which skills do you hope to learn from this group? Are there any skills you would like to share?

I have finished building my brick oven last fall and am so far making a lot of Neapolitan style pizzas. I would like to experiment with different types of bread using wild yeast starters. I would be able to contribute my experience with wood fired baking.
