Someone made a kick ass cheesecake at the last Italian potluck! I'd like to make a cheescake for V-Day so if you wouldn't mind sharing your recipe anonymous cheesecake person or anyone else that might have a really good cheesecake recipe please do!!!! smile

This is my absolute favorite cheesecake by Tal Ronnen out of his cookbook The Conscious Cook. We savored every bite ... a real "treat"!

sorry i missed v-day.
i made the cheater's version of kick-ass cheesecake at the potluck.
i don't follow an exact recipe but it goes a lil somethin like this: (all the recipes i tried previously had too much tofu and ruined it for me..but totally curious to try shannon's recipe!)

2 cartons of tofutti cream cheese
1/2 to 2/3 portion of the boxed morning-nu organic tofu
1/2 c of organic sugar (may need more-taste test)
2 or 3 Tbsp organic lemon juice

used a premade graham cracker crust

frozen organic strawberries to top, just boiled with a little corn starch to give it a saucey topping.

I know that I took one over too....

2 cartons of tofutti cream cheese
1 cup of organic sugar
the juice from 1 lemon (I squeeze my own)
a dash of vanilla

used premade graham cracker crust

Preheat the oven to 350°F.
Blend together the nondairy cream cheese, sugar, lemon juice, and vanilla and pour into the graham cracker crust.
Bake for 60 minutes, until the top is golden brown.
hill overnight in the refrigerator.
Cover the top with thawed frozen fruit of your choice and allow it to chill for at least an hour.
