Hi Cindy! The cupcakes came out of the cookbook Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz.

I can't find the recipe on Isa's PPK website, but here's a link I did find:

‘Mexican Flag’ Black Bean & Corn Salad

Ingredients:
32 oz black beans – drained & rinsed
1 can Summer crisp yellow corn drained
2 C peeled & diced jicama
½ C chopped red bell pepper
½ C chopped cilantro

Dressing:
½ C olive oil
3 T cider vinegar
1 tsp minced garlic
1 tsp salt
½ tsp cumin

Directions:

Mix all the vegetables together in a large bowl. Mix all the elements of the
dressing in a bottle & shake well. Pour over vegetables and marinate in the
refrigerator at least 1 hour or longer before serving.
