An Extraordinary Thanksgiving Dinner

The Let’s Cook Something Extraordinary Culinary Center (a.k.a Joe’s house) (map)

Selected By: Joe

Thanksgiving is the one special day of the year when we all gather together and – cook! But this won’t be the typical meal of dry turkey served with cranberry sauce that comes out of a can (you know, the kind where you can still see the can rings going around it) followed by store-bought pumpkin pie. Instead I was thinking of creating the kind of Thanksgiving menu you might find at a top-notch restaurant. Here is an example of what I have in mind:

Buttercup Squash Bisque
Ginger, Crème Fraiche and Chive
(Mickey)

Caramalized Pear and Arugula Salad
Proscuitto, Gorgonzola and Aceto Balsamico Tradizionale

Baked Oysters
Pancetta, Leeks and Mornay Sauce
(Eva)

Brined, Roasted Fresh Whole Heritage Turkey
Grilled Matsutake Mushrooms, Cranberry Shiraz Compote, Truffle Sauce
(Joe)

Leek and Potato Tarts
(Sabrina)

Persimmon Ice Cream
(Eva)

I can provide recipes for the above dishes or we can change the menu to suit those who sign up for the event. So join us and help make the first Let’s Cook Something Extraordinary Thanksgiving dinner something to remember!

I will take the brined turkey course since it requires advance, overnight preparation.

The menu now includes the cooking assignments for each dish.

The potato dish still needs a volunteer. New RSVP's can sign up for that (I have the recipe) or can suggest an appropriate alternative.
