comfort meals, chicken fricassee with leeks, vadouvan lamb & apple curry, tandoori anything, tibetan momos, asian soup noodles, indian breads, french sauces, desserts, anything that makes me curious, want to create, and eat.
finding and roasting a goose which yielded more fat than i could ever imagine! we're talking a serious amount of fat which can be good news or bad news to some. mines was a disaster. so much to learn about goose...
tough call as i've been influenced by varying styles from traditional haute french, country italian, purist & nouveau japanese, african bush food, asian streetchop to farmer's mkt style seasonal calif cuisine. my staple dishes are soups stews&roasts.
