Norweigan Smoked Salmon & Italian Wines - tasting adventure

Ok, it might not sound like the most obvious match but trust me on this one. Our wine specialist has teamed up with two of her favourite suppliers – Hansen & Lydersen and Passione Vino to bring you an unforgettable and really original tasting.


Queen Maud Top Fillet (half-side)

The recipe for the Hansen & Lydersen smoked salmon was created by Lyder-Nilsen Lydersen in 1923 and his great-grandson, Ole, has brought the recipe and tradition to Stoke Newington. Using a subtle mixture of juniper and beech woods he creates succulent and incredibly tasty salmon which they cut thickly almost like sashimi to allow you to fully enjoy the flavour and texture.

They take their craft very seriously and smoke their fish within 48 hours and use real smoke not an electric smoke generator as most commercial smokers do. They never need to resort to adding colour or preservatives and only wrap their fish in paper – not in vacuum packed plastic.You have to taste it to believe the quality and how much it stands out from other smoked salmon you have tasted before.

So to complement this wonderful product I wanted to find the most exciting and inventive wines and my thoughts turned to Passione Vino a collective of Italians who have burst on to the London scene with such bonhomie, enthusiasm and knowledge that they truly embody their name. Their wines are stimulating and always surprising – in a good way!


So … we have put together 6 matches, 3 conventional (or as conventional as this kind of thing could be) and 3 double takers, that we think will blow your minds. We are using 3 different cuts of salmon because the fish tastes and feels so different depending on the fat content, thickness and the way the salt moves as the fish is hung.
