I should add that if your acupuncture vet is different than the vet you saw that gave you the steroids, be sure to let them know about the steroid shot.  
And Olivia, is this the same pup that has Cushings?  I'm not sure if Cushings would have any effect on the way that the steroids react in the body.  If it is the same girl, be sure to ask the vet if the Cushings affects any of the meds or treatments.  That would be my only concern about the prednisone.
I don't want to sound like a "know it all" but many doxies in the group have gone through this and I have followed their progress through their treatment in case I could pass it on and help others.  (And we had the Rockbrook vets at the seminar talk about the benefits of laser and acupuncture treatments for back issues recently.)  Georgie had a small back injury last year about this time.  It took a month of steroids, pain killers, and crate rest (which was hell for both of us!) to get him healed up and back to normal.
It's scary to go through, you feel helpless as you watch your baby miserable in pain, and can't walk.  :(  Hopefully it helps to have the people in this group to help you feel better about the treatment she's getting.

Prednisone is a standard steroid that really does help the dogs with back issues get back up on their feet again.  It sounds like her back was getting ready to go out, and it just so happens the shot was there in the middle of it.  It didn't cause the problem, it wasn't a bad reaction to it or anything.  It was just that she was at a point in her injury where the injury couldn't turn back.
I would recommend to keep on with the laser treatments, acupuncture, steroids, and crate rest.  The combo has helped MANY of the doxies in the group get back up on their feet and walk again.  (They could throw in some pain meds, too.)  I have watched at least 10 dogs in this group go through this in the past 2 or 3 years, and they all are back up on their feet and walking again (without surgery).
5 Elements in Omaha (I know you're from Lincoln) does do holistic, but they also would put them on steroids when there's a disc injury like this.  It's just one of the few drugs that actually helps.
I do know some vets recommend anti-inflammatories (like NSAIDS), but the dogs that took those first didn't get better, and ended up switching to steroids.  
Keep us posted on her progress, but it does take time for them to get better.  You have to have patience, and keep her on strict crate rest.  No jumping, running or playing when she does start to feel better.  (And she will!)

Just wanted to run this by everyone, My girl appears to have a back issue, first diagnosed with a bladder infection, symptoms progressed as her little paw won't turn a 'certain way' now so doctor is sure she has back issues. She was acting weird but not really crying out in pain, now after him giving her a shot of pregnisone a strong steroid, and a pain pill she won't move much and has no reactions just lays in her kennel, doesn't even want to eat unless I hand feed her. She went from walking around to this.
Please any suggestions? She also gets laser treatments. I'm going to go get acupuncture tomorrow also; I just feel like I shouldn't be letting the vet give her the strong steroids???????? I take her back to him this afternoon for more steroids.
