R, IBM SPSS Modeler, and a host of other tools based on environment and objectives.

Do you think data visualization is more of an art or more of a science? Why?

A bit of both - Art to appeal to your audience cortex and tell a story; science for defining the right dimensions, extracting the right data and transformation, and providing the appropriate insights
