You know the score. All vegan all fabulous community meal prepared by volunteer chefs for a minimum suggested donation of around £2.50.

Left over proceeds go to the chefs chosen charity for the night.

    Instructions

    Use a spiralizer (or mandolin or vegetable peeler) to create noodles from the carrot and zucchini. Place them in a large mixing bowl and top with the other vegetables.
    Whisk sauce ingredients in a bowl. The sauce may be a little thick, ( I actually used heaps of apple juice in the dish last night) but will thin out after it’s mixed with the vegetables.
    Pour the sauce over the vegetables and toss. Even Yummier after 1 day in the fridge as all the flavours have infused!!

    Blend/process nuts and raisins dates, place in the fridge to set, put in the freezer speeds this up. In blender place all the topping ingredients and blend. Spread on top of the base place in the fridge for an hour to set: Again can be frozen to speed up the setting process. Mix ingredients for cream in blender. ( think for the cream adding some cocoa powder would be lovely also for a nice chocolate sauce!!)

    Pile on some fruit and voila!! Pure indulgent healthy pudding!!

    Some variations I found with experimenting….Orange essence to make a chocolate orange torte is pretty lush, adding a banana to the initial mix thickens the mixture nicely and adds a lovely banana flavour. Also oats can be used in the base so it is not all nuts. The dates /raisins can also be replaced with a little maple syrup for some sweetness.

    Raw Chocolate Torte with Cream

    Ingredients.

    Crust
    Mixed nuts and raisins/or dates (chop and soaked for at least 20 minutes if not soft) a little oat or almond milk to bind.

    Chocolate topping
    2 packets Creamed coconut, 1 cup Dates and Apricots, Green and Blacks Cocoa Powder to taste, 1 dessert spoon natural Vanilla essence, 1 cup cashews, soaked at least 4 hours

    Cream
    Coconut cream, cashew nuts soaked, and Vanilla essence.

    Raw Pad Tai Serves: 2-3

    Ingredients

    2 medium courgettes
    2 large carrots
    2 green onions, chopped
    1 cup shredded purple cabbage
    1 cup cauliflower florets
    1 cup mung bean sprouts or radish sprouts (spicy) (optional)
    ½ cup crushed peanuts (optional)
    ½ cup chopped fresh coriander/cilantro (optional)
    Sauce
    ¼ cup tahini ( I found it made it a little bitter so left this out)
    ¼ cup almond butter (or cashew butter, or a blend of both) ( I used soaked crushed cashews rather than premade butter)
    2 tbsp lime or lemon juice
    ¼ cup tamari
    2 tbsp agave (or maple syrup)
    ½ tsp garlic, minced
    1 tsp ginger root, grated
    1 chilli chopped or grated

    Sauce

    ¼ cup tahini ( I found it made it a little bitter so left this out)
    ¼ cup almond butter (or cashew butter, or a blend of both) ( I used soaked crushed cashews rather than premade butter)
    2 tbsp lime or lemon juice
    ¼ cup tamari
    2 tbsp agave (or maple syrup)

    To Create Broccoli bites

    To create:
    1) In a coffee grinder or good blender, grind sunflower seeds to a breadcrumb or flour like consistency.

    2) Add ground sunflower seeds and the rest of the ingredients to a food processor. Process until the mixture turns into a paste. ( I used a blender)

    3) is easier to roll into ball shapes if left for a while in the fridge, about a half hour.

    4) Scoop out a teaspoon of mixture, roll into a ball with the palms of your hands. Place in a dehydrator or bottom of the Oven on lowest temperature.

    5) turn midway through dehydrating ( not essential!) Dehydrate about 4-5 hours.


    Can also be shaped into burgers on a bun for children , pretty awesome!!..and will freeze in an airtight container for up to a month.

    Raw Broccoli Bites and Sauce (2-3)

    Ingredients
    2 cups broccoli florets (chop very small)
    1 cup sunflower seeds or almond flour ( I used sunflower and pumpkin seeds)
    1/4 cup pine nuts ( or just more seeds!!)
    1/4 cup onions, chopped
    1 large clove garlic
    3 tablespoons extra virgin olive oil
    1 tablespoon fresh parsley
    1/2 teaspoon sea salt
    1/4 teaspoon pepper
    ½ tsp Cayenne Pepper

    Sauce
    ½ cup Tamari
    ½ cup apple juice ( apple and Mango juice is also delicious!!)
    A handful of Apricots (thicken it beautifully)

    The Rickards family led by the amazing Sarah bought an incredible raw food feast to Derby PK tonight and the comments are still coming in on the FB page raving about how fantastic the food was!! An amazing night and great to see new faces, meet up faces and new PK faces all together sharing a community meal. Over £100 raised for Sea Shepherd as well:)
