Seriously? How can you pick just one?
I like to invite out of town visitors to Tung Po, near where I live in North Point, so they can sample typhoon shelter dishes and some unique offerings. But of course, there are many wonderful restaurants in Hong Kong. If you narrow down by type of cuisine, there can be a favorite for each category.
French, some Italian and Spanish, working on Mandarin.
