I don't believe in a signature dish. If you marry flavors well and focus on the part of the tongue that is affected by different flavors; you will create wonderful delights regardless of the genre.
Wolfgang Puck is a hoot. We met years ago and always had such fun. Chef Ramsey from Hell's kitchen cracks me up - as a character. Bobby Flay seems to blend interesting ingredients in almost a provocative offering often.
