Beginning Raw Living Vegan Classes with Chef Arlene Siegel

The Beginning Series of 4 classes starts off with a tour of a raw living vegan kitchen. Although we use many of the standard appliances and tools, a few exceptions exist. For instance a high speed blender is really useful, but no need to upgrade until your current one crashes.

The first class is...
breakfast and the menu is so important as it sets the tone for a healthy day of eating. We make a green smoothie, granola and almond milk. I tell my students if the only change they make is adding a green smoothie to their current diet, it would make a HUGE difference in their health.

The second class is lunch...we make a sandwich. Yes! We can make a sandwich. We make 2 pates and onion bread then build a sandwich with sliced veggies.

The third class is dinner. Raw living sushi is the entre served with rice that isn't rice but tastes even better.

The final and fourth class in the Beginning Series ends on a sweet note as we make snacks and dessert. The lineup is popcorn (again, not corn), kale chips and macaroons.

One of the things I love best about teaching the Beginning Series is seeing the faces of the students as they sample the foods. They are delighfully surprised by how delicious every recipe is as well as satisfying. Actually, the surprise doesn't go away even in the Intermediate Series, because as we make more complex recipes the culinary satisfaction keeps growing. Plus we have a fun time both in the kitchen and around the table!
