Picnic Potluck, Eugene Veggies Hits A Park

Liz, one of our new and active members, came up with the idea of doing a picnic. What an awesome idea!

It's a potluck picnic. Just keep your dish free of meat, dairy and eggs. If you need recipe ideas, let me know. Everyone will bring their own beverage, plates and utensils.

I know we have some musical members. So if people want to supply some live music, that would be awesome.

Also, maybe we could get some lawn games going. I bought two blongo/ladder golf games plus a ring toss.  Those should be fun for all ages.  Feel free to bring whatever you have.

This is a good whole-family event.

NOTE:  I will be sending out a last minute e-mail on Wednesday, July 24 with further instructions on location and other important details.  If you do not get that e-mail, be sure to let me know so that I can send you another copy.  Some people have reported problems with their spam filter.

    It was great meeting you all and eating all that delicious food! The lawn games were a great idea and so much fun! I look forward to future gatherings. Also, I'd love to get the recipe for the Thai peanut cabbage salad, if whoever brought it is willing to share.

      Here's the recipe I used for the Thai peanut salad. I used agave instead of honey. Also, I just followed the dressing recipe then mixed it with romaine, green and red cabbage, green onions, carrots, and lo mein noodles.http://www.yummly.com...­

    Hey JJ, I see there's only 2 spots left. I might be able to come AND might have a guest BUT! I don't want to take the last 2 spots when I'm not 100% I can come. The RSVP says "2 spots left" but your MeetUp description seems to suggest it's open-ended? I'll await your response before deciding.....

    P.S. Anyone have a recipe that mimics Market of Choice's super food salad? It's made w/ curly kale, wheat berries, quinoa, blueberries, legumes, seeds & nuts, etc. MoC also said they make their own pomegranate & green tea dressing....and I have NO idea how that would be concocted. I tried making the salad today and it only came out so-so compared to MoC's delicious version.

      Cindy: I think your Lloyed Knox idea was inspired, but I had already promised one of the 'yes' RSVPers that we would have the picnic in a spot that is easy for people without cars to get to. So, as you see in my post above, I am trying to reserve a spot at Skinner's Butte. I'm hoping that next year we can do something like you suggest. Lloyed Knox sounds wonderful and people without cars might be able to hitch a ride with someone else. Something to think about for next time. Thanks again for the suggestion. (If the permit process thing fails, I may come back to this idea.

    Update On Location: I caved. I decided not having a reserved spot is going to be too crazy-making for everyone. And if we pick a nice, close-in location, there is likely to be competition for the spot. So, I submitted an application for us to be able to reserve the picnic tables near the "River Play Discovery Area" (fancy playground) in Skinner's Butte park. If the City approves the permit, I'll change the location above, let everyone know, and remove the limit on the number of people who can attend. At that point, we would have a permit so we could legally have more than 20 people. The permit process can take up to two weeks, but the person I spoke with said that easy applications like ours should be processed sooner. Let's keep our fingers crossed as I think that will be a lovely location for us.

      Amber: My apologies, I'm still working on a location. I'm going to try to see if Eugene will let me know which locations are reserved so that I can pick one that isn't promised to another group. I'm also going to check out Cindy's suggestion re EWEB. I'll do my best to come up with something soon.

      LaMar: I took a look at the actual city rules. It doesn't matter what you call it. If you have 21 or more people at a city of Eugene public park and if you don't have a permit, you can get fined. I don't know the likelihood of actually getting fined. I've heard that someone goes around occasionally and checks. We could take our chances, but I just don't want to have to worry about it. || FYI: If you are interested, here is what the City website says: "...you should know that a permit is required for any public assembly, private gathering, parade, picnic, or other event involving more than 20 individuals in a City park." I tried finding the rules for Springfield and couldn't find them.

      Dan: I agree! A "tentative" or "maybe" would be nice. If you find out you can't make it after all, please change your RSVP as soon as you can. I had to add a limit to the number of people who can attend. If you can't come and change your RSVP, then someone else will be able to take your spot. But I hope you can make it!! - JJ
