Anniversary And Bean Celebration

Meetup was kind enough to let me know that the end of November officially marked my 1 year anniversary as the Eugene Veggies organizer. Yahoo! I want to dedicate this event to celebrating a year of being your organizer and fondly remembering our founder, Andrea.

I was thinking that doing a burrito bar would be fun. And that lead me to thinking about one of nature's best magical fruits: *beans*! So, I'll share about 20-30 minutes worth of video on the topic of beans. I have some health videos from our beloved Dr. Greger (see NutrtionFacts.org) as well as a bean burger recipe from Jeff Novick.

And maybe we could play a game with beans? Bean poker??? I don't know. Maybe we will just socialize. I do have a cookbook, The Great Vegan Bean Book that you can look at.

OPTIONAL/VOLUNTARY BEAN FOOD DRIVE:  To round out the "bean" theme, it would make me feel good if we collected bags of dried beans as well as cans of beans to give to Food for Lane County. I have heard that their donations are dramatically down this year, while the need has increased.

BURRITO BAR
I will supply flour and corn tortillas and spices like a chili powder blend. I will also supply plates, cups, napkins, tea and water.

You can bring an ingredient or two for stuffing the burritos.* This will be a burrito potluck, so bring enough to share. Ideas for burrito innards include:
>>> beans!
>>> rice or other grains like quinoa (to get a bit creative)
>>> crumbled baked tofu or tempeh (with taco spices?)
>>> diced (sweet?) potatoes (for that breakfast burrito option)
>>> corn
>>> mushrooms
>>> shredded lettuce
>>> salsa
>>> guacamole
>>> enchilada sauce
>>> poultry-spiced soy curls
>>> mole sauce
>>> sour cream (dairy free)
>>> nut cheese sauce (dairy free)
>>> What did I miss?

If we get a lot of people, then maybe instead of bringing burrito innards, someone could bring a dessert. Also, it is not required, but if you could post what you plan to bring in the comments section - whenever you happen to make your decision - that will let everyone see where the holes are. No biggie. Just something to think about.

* Please do not bring anything with meat, dairy or eggs

On January 15, I will send out an e-mail giving last minute information and directions to my house. If you do not get the e-mail on the 15th, let me know so that I can try again. Meetup e-mails do not always seem to get through.  I will also send the e-mail to anyone who signs up after January 15.

    I'm planning to bring home grown organic micro greens to add to the burritos or munching: sunflower greens and clover. Both crops are looking good and my taste testing confirms their yum-factor.

    Sorry, had to cancel, I have to take a trip that weekend. If the trip cancels i'll re-sign up. but I am sad because i really wanted to go. I had to take advantage of the 3 day weekend with MLK day and take the drive to eastern oregon.
