I moved from CA in 2012 and miss the hiking I did there. I would like to learn more about this area.

Hi Livia and welcome to our community. To answer your question, much of our protein comes from alternate sources to soy like beans and legumes. However, we do use soy quite often as a seasoning and in other ways as well. In the upcoming menu, I'm sure that the seitan will have soy sauce in it, possibly the Brussels Sprouts and perhaps the soup. Many of the recipes that we use appear in our Chef's Blog.
