Well, as you know that is what Features is for. As far as fixing a bug on production, with Pantheon you just clone code and db to local, fix issue, push back to dev, then merge code from dev and db from live to test and if all goes well backup live db and push code. That part works well!

The thing is that config changes still are painful. I have been hearing lots of good things about solving this once and for all in Drupal 8 though, I have no knowledge of the inner workings but what I know is that it is being worked on heavily by the community. We just have to wait another year or so for D8. Until then, it is a rocky road!

Yeah Git flow is great. 

Unless i am missing something  git flow handles only the things that are in code. What about the config data and it changes. Also when you change the content type, The table structure changes. How will you handle the data ? if the new content type  is addition of Non-Null field then it become more complex. 

I am trying to go towards the changes, that are not easy to move to code by features or other helper modules.

I can gladly cover this tomorrow if anyone is interested, it really comes down to best practices for Drupal Development Workflow. Btw, my current solution is to use Gitflow (https://github.com/nvie/gitflowhttp://nvie.com/posts/a-successful-git-branching-model/) and Pantheon. It works great!
