Sandi: Argentinian Picada & Ensalada Rusa (appetizer tray & potato salad)
Susan: Feijoada, a Brazilian meat and black bean stew, and a bottle of Malbec wine.
Nancy: Roman Bean & Pumpkin Stew with gresh Grated Corn (and quinoa to serve the stew over) and bottle of chardonnay or pinot gris to complement the dish.
Jim: Golden Yuca-and-Coconut Cake, known as enyucado
Kim: empanadas with a meat filling, probably beef. And bottle of wine
Chris L.: Chicken Enchiladas and sautéed plantains
Barb: Tres Leches Cake and Dulce De Leche with various items to dip and wine of course
Liz: Brazil Bahia style shrimp in coconut sauce and rice with a bottle of Argentinian Torrontes
Jeannette: I will make quinoa and avocado salad with lemon-cumin vinagrette.
Chris Izzo: Peruvian Arroz con Pollo( a chicken and rice with vegetables) and wine.
