Meetup for an ethnic cooking class!

We will cook authentic Mexican food.  We will start with Sopa de Tortilla, then we will learn how to make authentic Chile Rellenos from roasting of the peppers to making the tomato and garlic sauce to finish the dish.  We will make two side dishes: chayote squash and rice with poblano peppers and corn.  We will finish the meal with two flans, one traditional and a chocolate cheese flan.  We can enjoy all of this while we sip some Margaritas.  Everyone will play a role in cooking this meal as well as the cleanup.  

Please bring notebook and an apron if you have one.  Nominal fee of $5 to cover ingredients paid the day of the class.

    It was great to see all the new and old foodies last night! I hope everyone one learned some things about traditional Mexican cuisine. We introduced some history of the traditional Mexican Chile Relleno dish and the poblano and pasilla peppers which we used in four dishes: appetizer, tortilla soup, we used pasilla and the poblano rice and chile rellenos we used the poblano peppers. We enjoyed a chayote squash side dish, jicama, some margaritas, hibiscus flower drink and a traditional and a chocolate cheese flan. Check out some pictures of the event under the Cooking class link.

    Calling all foodies! This is a reminder for our upcoming Meet-up this Thursday February 20th. We will be meeting at my home at: 10655 Redvale Road in Highlands Ranch, 80126.

    This is a popular event, if you RSVP’d and know that you will not be able to make it, please change your RSVP status so that someone on the waiting list is able to attend. Be ready to enjoy the meal we cook. After dinner, you may have to take dessert home because the flan may not have enough time to get cold for its optimum taste.

    If you have an apron, please bring it. The menu will be nut allergy free. You can pay the $5 ingredient fee when you get here.

    What is Paleo? I have a culinary degree and have never heard of it. Is it some kind of Spanish cuisine? Lebanese would be fun -- very similar to Greek and Turkish food -- just a thought.

      Hi Sheri, the name paleo comes from palolithic, some refer it to the cave man era. It does not have any background with food with a specific country. The basic concept I would summarize as organic food without gluten or dairy. There are many cookbooks that use a lot of creativity and variety. Thanks for the suggestions, I would love to hear more about how you've used your culinary degree, awesome!!! More info to come on the class, I have received requests for authentic Chile rellenos and tres leches cake (My family recipe is one of the best there is), not on the healthy side but it makes for a nice recipe for birthday parties or any celebration.
