Republique with Chef Walter Manzke- family style meal

Here's my latest profile of LA Chef Walter Manzke’s Republique – Part 1 of 3  (click hyperlinks in the articles to read Parts 2 and 3)

Chef Manzke combines familiar bistro dishes with more refined dishes on his menu at Republique in the old spectacular space on La Brea just north of Wilshie that use to be Campanile for so many years. 

This dinner will be a family style meal which is consistent with the restaurant's style of service. If you're not comfortable with this style of service, then please do not sign up for this event. There will be 12 spots available, and the price will be $55 per person excluding tax, tips and drinks

(Okay I confirmed everything with the GM, so thus ths $3 increase due to a couple menu changes- see below. Republique is also still implementing an automatic gratuity despite the changes to the IRS code for tips, so total with tax and tip will be $72.54 still excluding drinks. They'd also like it to paid on as few credit cards as possible, so please bring either cash or a check payable to me. Sorry this is their policy. I will be charged for no shows, so do not sign up if you aren't going to come. Please allow someone else to come instead).  

Based on an ample portion size per the restaurant's plating, the  menu is as follows (food porn below). This menu has now been confirmed with the chef. Note Republique menu is ingredient driven so some menu items change with seasons and what are the best products available. Three items have changed, most noticibly the fish. Other fish options were considerably more expensive and would have driven the ticket average up.


• Eggs on Toast santa barbara uni, soft-scrambled eggs 

• Hamachi Crudo pineapple dashi, serrano chili, cilantro

• Grass-Fed Beef Tartare tarragon aioli, pickled red onion, potato chips 

• Duck Liver Mousse port wine gelée 


• Roasted Cauliflower butternut squash, singapore curry, hazelnuts, medjool dates 

• Wood Oven Brussels Sprouts frisée, lardons, soft egg 


• Risotto Nero acquerello carnaroli, mediterranean octopus, manila and rzaor clams

• Spaghetti Rustichella w. dungeness crab


• Liberty Duck Leg Confit roasted mushrooms, escarole, farro, red wine sauce

• Mary’s Organic Rotisserie Chicken red russian kale, roasted fingerling potatoes 

• Braised Beef Short Rib spinach & potato mousseline, baby carrots, red wine sauce 


• Meyers Lemon Tart strawberries, creme fraiche 

• Cherry Tart griottines, pistachio ice cream 

Parking on street (read signs) and  valet in parking lot next door.

Deposit will be refunded if meetup is cancelled, rescheduled or if member cancelled w. at least 1 day notice prior to the event. For those that don't cancel, the deposit will be refunded after the event. This deposit isn't applied toward the cost of the event. Deposit is required to discourage "no-shows". All deposits go through Daryl's account.

    It was good. The uni appetizer needed a little salt or acid (another table mate stated), it was plain for me. The duck liver mousse was very good, I could eat that everyday. The chicken was very tender, exceeded my expectations. The lemon tart was melt in my mouth, very yummy!

    Good food and nice people. Family style allowed for a very extensive menu. Most items were terrific. Restaurant was very noisy however.

    Okay after sending one more notice, still having an open spot, and not filling it, I asked a chef friend to join our group. So, Chef Kevin Meehan of Kali Dining will be joining our group. Always neat having a trained chef to dine with to learn from their knowledge of food.
