A Little Texas BBQ at Chef Tim Hollingsworth's­ Smoke Out Pop-Up at Short Order

Chef Tim Hollingsworth, former chef de cuisine at the French Laundry in Yountville, is gearing up to open his restaurant since leaving the French Laundry at The Broad sometime in 2015.  In the interim, he has been doing pop-ups and appearances at special tasting events.  For the next 2 weeks, Hollingsworth will be doing a pop-up at Short Order at the Farmers Market, serving up Texas style BBQ and Southern Fare, and he's breaking in a new smoker for this occasion.

Each day, Smoke-Out will feature a special main for lunch and a different one for dinner.  Friday, the dinner main was a 1/2 rack of Berkshire pork ribs with choice of 2 side dishes plus a dessert for $26.00 plus tax and gratuity.  I will provide a menu up for Monday night as soon as I can.

Let's try out the offerings here and find out how his BBQ compares to the likes of Bludso's and Gus' BBQ in the LA area.

EVENT DETAILS: 

• We will meet inside of the restaurant shortly before 7:30pm.  I will see if I can make a reservation for the group.

• Cost per person is expected to be about $35 - $50, depending on how much food your order, plus any beverages, tax and gratuity.  Please bring at least $60 in CASH (small bills preferred) to settle your portion of the bill.  Unfortunately, right now, I do not have the pricing for the food items.

• Parking is available in Farmers Market lot on the south side of the Market, and is Free with validation for up to 2 hours.  Becareful not to park in any other lot, as Short Order most likely will not provide validations for those lots.  Street parking is also available. Be sure to read the street signs for any parking restrictions, especially whether or not you need to feed the meters, if you are parked at a meter space.

    I can't tell ya how lunch was because I showed up for the dinner, which I thought was a reasonable value and tasty. PS Sklar if I could show how to make lunch for yourself at home would you be interested?

      That's their prerogative. There are members who have the luxury to dine during lunch on weekdays. I have a regular 9-5 job and host only when I am able.

    I went for lunch on Friday. Very, very tasty. And extremely filling also. They told me the best way to keep up with the changing menu for the popup is Short Order's FB page.

    okay stopped by at lunch and got the low down. the barbecue items are a daily special so there isn't a separate barbecue menu. The smoker is actually small, so there's a special at lunch and a second special at dinner. They will change the specials every few days. Currently the lunch special is a pulled pork and brisket sandwich. Dinner's special is a half rack of pork ribs. Specials come with beans, potato salad, and dessert. Lunch was $18, and the dinner pork ribs are $26. The pork is well sourced, Berkshire pork, so that's why there's a higher price point that a place like BLudso's. Not sure if by Monday the daily speciall for dinner will change or not. The chef told me the list of other items he's going to do, but aside frrom the brisket I forgot what he said.
