1 16oz bag of penne pasta cooked
1 bag of romaine lettuce torn into bite size pieces
3 Boneless skinless chicken breasts cooked and cubed
1 pkg of grape tomatoes halved
2 2.5oz cans of sliced black olives
5 green onion stalks sliced
A hand full of fresh basil leaves
2 cloves of fresh crushed garlic (I crush it instead of using the jar)
1 6oz container of crumbled feta cheese
Coarse ground black pepper to taste
1 bottle of your favorite Italian Dressing (I used Fresh & Easy brand Three Cheese Italian)
In a large bowl layer pasta, lettuce, chicken. Make a ring of tomatoes on the around edge next ring olives, green onions, snip basil and sprinkle over top along with crushed garlic. Put crumbled feta cheese in the middle. Sprinkle with ground pepper to taste and garnish with basil leaf. Cover and chill until ready to serve. When serving, shake and pour entire bottle over salad, toss and serve.
Family favorite meal served with garlic bread or a potluck hit. Enjoy!!
Thanks for the recipe Veronica. The pasta salad was delicious! I will be making it soon! The Boulder House meetup was such a great turnout and it was a pleasure to meet you.
