So, it's after the holidays and time to get back on track after holiday indulgences. My goal is to come up with entrees around 300 calories for each of us to make at home and bring to this dinner to share. Each recipe makes 4-6 servings...just enough for each of us to taste test each of the 300 calorie entrees.
I would also like to keep meal prep to no more than 30 minutes, so you'll be more inclined to make these meals again at home.
Barbara has offered a half hour yoga session before our dinner. If you're interested in participating in this, please arrive in comfortable clothing with a yoga mat or beach towel. We will sit down for dinner around 3pm. If you're not interested in yoga, feel free to arrive later for dinner.
Pick one of the entrees listed below or bring your own, keeping within the 300 calorie entree with 30 minute prep guideline. Obviously, we won't be able to try them all, but the recipes will give us a good place to start.
