Whole Lamb Butchery

Just in time for Easter! This Whole Lamb Butchery Class is offered by the Boulder Butchery Guild and will take place in east Boulder, using Rambouillet lamb raised by Kim and George Borschers at Leistikow Farm. This is a very intimate class with a maximum of six students. The instructor will demonstrate on one half of a lamb; students will work in pairs, taking turns breaking down their own half. Each student will take home just over a quarter of a lamb: about 15-20 pounds of meat & bones.

    Dear Debbie, thanks for your note. We'd love to have your boys in the class—it would surely be an important experience for them. We would ask only that they not handle any knives, and that they remain with the class, venturing outdoors only while supervised. Thank you for asking. We hope you can join us.       Thanks so much for your response and willingness to have my boys join. Sorry for the delay. We live in Denver, so I think we'll pass this time as we've had a busy time and getting out of the house by 8 am tomorrow will be too much. I hope to be able to do it in the future or to be able to order meat as an alternative. Thanks so much!
