Just in time for Easter! This Whole Lamb Butchery Class is offered by the Boulder Butchery Guild and will take place in east Boulder, using Rambouillet lamb raised by Kim and George Borschers at Leistikow Farm. This is a very intimate class with a maximum of six students. The instructor will demonstrate on one half of a lamb; students will work in pairs, taking turns breaking down their own half. Each student will take home just over a quarter of a lamb: about 15-20 pounds of meat & bones.
