Whole Pig Butchery: Mangalitza

This Whole Pig Butchery Class will take place at Cure Organic Farm, using one of the farm's own Mangalitza pigs. The Mangalitza—also known as a 'wooly pig' because of its hairy coat that resembles a lamb's fleece—is a rare Austro-Hungarian breed that is prized for its lard as well as its lean, dark-colored meat. This is a very intimate class with a maximum of four students. Alberto will demonstrate on one half of the pig; students will take turns breaking down and making cuts on the other half. Mangalitzas grow much more slowly than most other breeds, and Cure Farms raises their organically. As a result, this specialty class is a bit more expensive than our other whole pig butchery classes. Each student will take home one quarter of the pig: around 20-25 pounds of lardo, meat & bones.
