Mom's Day Out! Healthy, Delicious Cooking for the Family

You just celebrated Mother's Day, and we think you should treat yourself a little more with a cooking class and lunch out at The Garden in Park Hill! Grab a girlfriend, and come on over for some fun with The Empowered Kitchen. You'll learn great cooking tips to save time and money! Even if you're not a mom, you'll have a great time connecting with the folks in the class, so come on over!
Need healthy, quick meals to prepare ahead of time and take with you to work? Come experiment with us! Come learn how to spend a few hours preparing all your cooked vegetables to have them ready to whip into quick, really tasty meals all week long! Dads are of course welcome in this class too! Anyone is welcome, for that matter. In this class you'll learn how to use all the odds and ends of what you have left over from one meal to meld into something even more delicious for the next day! You'll save money because you won't be throwing away leftovers and pieces of vegetables you may have previously discarded. You will get to take home fixings for several meals! We will make some healthy smoothies with delicious combinations of frozen fruits, kale, seeds and yogurt. Next we will experiment with salads using lots of different ingredients, such as boiled eggs, kale, lettuce, tomatoes, beets, green beans, tuna, nuts, seeds, fruits and cheeses. We will also have various ingredients so you can make several renditions of your own vinaigrettes. We will practice roasting vegetables to use for an endless variety of meals throughout the week.

You will also learn how to make a fabulous soup with almost any vegetable you have on hand in your refrigerator. We will make a delicious pureed vegetable soup and let attendees experiment with spices. We will also prepare greens for the week along with a delicious and unique garlic pesto. Finally we will also discuss and practice how to incorporate eggs into meals in creative ways. You will engage in a discussion of ways to stretch these ingredients into even more meals, like risottos, casseroles and curry dishes. You will go home with some tasty food, so come ready to taste and bring a few to-go containers! * This class can be made vegan and/or vegetarian-friendly. Please let us know if you have food allergies and/or dietary restrictions, as we can make some accommodations for allergies if known in advance. This will need to be discussed with the instructor prior to registration.
