Everything Apple! Making Cider, Hard Cider, & Vinegar

Apples, apples, apples.

We're lucky enough in NE to have a ready supply of this versatile fall food.  Join Lauren Winterholer and Craig Stephan to learn how to make the most of your harvest.

We will discuss our tree pruning process and favorite apple preservation methods, including apple cider vinegar and a tasting of Lauren's delicious apple pie jam.  For those of you who like to drink your apples, there will be sweet cider making with our antique cider press and hard cider making with Craig.

We are charging for this on a sliding scale of $10-15.

As this is another one with materials costs, we need a $5 deposit in order to keep your spot for you. It will be non-refundable, though it can be transferred to someone else if you can find another person to take your place.  Please make out a check to Lauren Winterholer and send it to Amy Antonucci, 219 France Rd, Barrington NH 03825... this is due to us by September 1 (TIP - send it now and you won't forget later!).

Co-sponsored by NOFA-NH and the Greater Seacoast Permaculture Group

This class is part of our 2013 Food Preservation Series: Cheese Making, Food Drying, Water Bath Canning, Everything Apple, Lactofermenting, & Root Cellaring

Sweet. I am coming to the brewing meetup next week. I'll pick mine up then. I'll also bring a bottle or two of my own brew?

Lauren - I just sent an email to the attendees and directed them to come to this page to find out more about how/when to come get it and all. Hopefully all will find their way!

Cider is ready to bottle! If anyone's interested in helping, Craig will be bottling it up Wed evening. Otherwise, just let us know when you'll be by after that to pick yours up! Yum.

Lauren - Can you share how you make your version of apple leather? Do you leave the skins on, and at what temperature and for how long do you dry it? Thanks!

And it just occurred to me that you may have meant the raw one...? I can't remember if I had that one out, but it's just apples, cored and put through a processor or vitamix with spice, and sweetened to taste, spread thinly on a silpat and cooked at 225F -- 2 hours for soft, and 3 hours for crispy. :)

      October 20, 2013

    • Debra

Thanks, Lauren! It was the raw one... I've some Northern Spy that would be perfect to make this with!

Hi Lauren, Amy & Permie friends,

I woke up uber late, feeling out of sorts, & discovered I have a fever; don't want to risk making folks sick, so am staying home.. I was really looking forward to today's gathering, and will miss seeing you! Enjoy the gorgeous autumn day <3

    Best adventure,
    Kym

Oh, I'm so sorry-- Hope you feel better soon.

I'm so bummed that I didn't get to attend this meet up; we have a longtime hard cider-making tradition in my family that goes back at least several generations, and I love seeing the antique cider presses and trading stories and recipes. Thanks so much for the photos <3

This was so inspiring! Thank you so much. For those of you who are interested in posting gleaning sites in the area, here is the address: Falling Fruit site:
    http://fallingfruit.org/about
Falling Fruit is a celebration of the overlooked culinary bounty of our city streets. By quantifying this resource on a map, we hope to facilitate intimate connections between people, food, and the natural organisms growing in our neighborhoods. Not just a free lunch! Foraging in the 21st century is an opportunity for urban exploration, to fight the scourge of stained sidewalks, and to reconnect with the botanical origins of food.

Lauren and Craig, thanks for doing this session and showing us what you're up to. You make it look easy but there's obviously a lot of knowledge behind what you're doing.

It was so good to see everyone today! Craig and I had a great time. (And thank you all so much for being so interested in my concoctions-- makes a girl feel good!) I uploaded 2 pdfs to the "files" (under MORE in the header.) We'll let you all know when the hard cider Craig made today will be bottled, and figure out how to get you all one!

Hi Amy, just put the check for this in the mail, and also a pamphlet for the Lexicon of Sustainability show. I am the north shore MA curator for the show, which illustrates food sustainability concepts. The panels are currently at the Heron Pond Farm Stand at Eastman's Corner, if you get down that far. Happy to get it to you for any relevant Seacoast events. Let me know.
