Vegetarian... would love to be Vegan if I could give up that dairy!
I try to eat 80% raw and 20% cooked. Easy during the Summer and Fall but I find it difficult during our Winters.
Too many favorites... Raw lasagne made with zuchinni and cashew filling, Thai vegetable/coconut soup, pesto pizza with grilled veggies, Spinach salad with berries and walnuts, collard leaf wraps, portabella "burger", roasted beet salad with pecans and goat cheese, roasted butternut squash with dried cranberries and many more.....
