    It was great fun last night!! Delicious foods and wonderful companies...Thanks for organizing as well.

    By the way, here is the carrot dressing recipe.

    2carrots,1/2 onion
    100cc Olive oil
    100cc Soy sauce
    100cc Vinegar
    4tbsp sugar
    2tbsp mirin(Japanese sweet rice wine)
    Put carrots in a blender.
    After mixing, add onions in it and blend them again.
    Finally, put the rest of ingredients in them and mix well.

    Grocery stores (like Kroger) have "mirin", but it'll be expensive there. So I guess it'd be OK if you do not put mirin in the dressing.

    1 large bunch Kale (leaves torn into bite size pieces and thick stems removed)
    1/4 cup Olive Oil
    1-2 Lemons
    1/3 cup Dried fruit
    1/3 cup Pine Nuts (toasted) or other nuts
    1/4 cup Parmesan (grated)
    1 teaspoon Red Chili Flakes
    Salt and Pepper

    Add the kale to a large mixing bowl, season with salt, pepper and drizzle with olive oil. Massage with your hands making sure to coat the kale with oil and begin to break down the cell structure.

    Grate the zest and squeeze the juice of the lemons over the massaged kale. Add the dried fruit, toasted pine nuts, Parmesan and toss to combine. Serve with a pinch of red chili flakes, if desired.
