Hello, take a sharp knife, get a pot with hot water. a large plastic bag, take the rooster upside down. put his head inside the plastic bag, and part of the body, say the following. Thank you for the food I am about to receive. slice the chicken neck. Hold the chicken tied and let the blood run for about 2 minutes. take the chicken and deep into the hot water, for 30 second, pull the chicken out and with your hand, pull the feather. deep the chicken into the hot water again and pull the feather. clean the outside well, after, take the sharp knife and cut the butt area and beware, there is a small green sack inside, you don't want to eat or brake the sack.  take the inside out and clean the liver, cut the chicken in slices and add some season and cook time.

Idk what neighborhood you are in but Harbor Freight has way better prices and equal quality on the tarps. Idk how you usin them, but i purchased eye lag bolts and spring caribiners from HD and then i got my 8 mil tarps from HF along w a grommet kit to make it nice and snug on the coop n run. I paid around $17 for a 11'x15'.

Mine seem to be ok - we reinsulated the coop this morning and also the run. Our buff Orpington seems to be the coldest but they have their hen house to go into if they need to. Running to Home Depot to get another tarp this afternoon!

When I grew up in Brooklyn there were live bird markets and I think that they still have them somewhere out there. you may be able to get them to show you or to do it for  you. If you do it alone be sure to study it on youtube or something like that. Its a pretty big job and you need to know what youre getting into.
UConn's animal extension thinks that the most humane way to put a bird down is with an electric shock in the butt. Ive also heard that the most humane way is to dislocate at the 5th vertebrate, just firmly pulling. I have done that before but its hard to figure out if you've done it enough or properly. 
Many south American immigrants know how to do this and the cleaning, and its worth it to ask around. I know guys up here from south American and also Eastern Europe who grew up on farms and know all of this.
Finally, there was a butcher in westchester that did the cleaning and cutting if you did the killing, but Im not sure where they are.
If you look around and still have trouble, email me privately and I can try to put you in touch with someone to do this for you. The question is, how far can you transport them and/or do you need someone local to do it? Melina

Its turns out the three young hens we were given 2 months ago are all roosters.

We're prepared to butcher and eat them and start over in the spring with fertile eggs,  chicks or pullets.

Does anyone know of a place in the NYC area that we can have them butchered and cleaned for a fee? We'll do it at home if necessary but I think it will be faster and easier (and more humane) all around to get a trained professional.
