Jon, Interesting that you think Kale U. is negligent by not adding a disclaimer to a salad dressing.

I will add this next statement as a disclaimer to all raw food recipes, which would include dressings. Those who are dealing with a health opportunity including weight loss, should consider all ingredients in a recipe as changeable to suit their current condition. The "Best Dressing" recipe has tahini, nama shoyu, olive oil, apple cider vinegar, fresh garlic, oregano and basil and can be easily changed. I personally add less olive oil and substitute water. I also do not add avocado to any salad that already has a good fat in the dressing. In fact Avocado can also be a substitute for the olive oil in the recipe and it will make it even more creamy. If people are counting calories, be careful because worrying about the calories can be counter productive and cause more stress. Please only eat Raw health pizza and by all means sprinkle kale on top.

Thanks Joan for a fun class.

On a bag of Kale that I bought from the store, it advertises "Highest Nutrition per Calorie". That attribute gets thrown out the window when you add globs of "The Best Dressing" and avocados to it. Although it is delicious, that dressing is loaded with
fat and calories. I think Kale University is negligent by not adding a disclaimer to that dressing so that students who don't want to gain weight do not mistakenly get led to believe that they can eat plate loads of that salad without risk. I don't think that dressing is much healthier than sprinkling kale on top of a pizza. Correct me if I'm wrong because I would otherwise love to load up on it.
