Bill Miller from Back 40 Meats will be teaching principals of preserving your meat from the moment you shoot it to the time you put fork to mouth. This will be a must for anyone looking for more options to food storage.

    Thanks for putting this on. I will need these skills! I just purchased 4 acres in the city and am figuring plans for small scale meat production. (KC allows 15 chickens, and 2 head of livestock) we are wanting to get lambs.

    Unsure If we can be there yet as the Wife and I have to be at a American Legions meeting in Smithville at noon. If they get done in time we'll be there, as we do a lot of our own meats we're always looking for new or better ways to handle it.
