Chilled soup of the day or Salade de Melon (summer melons, compressed cucumber, kolbrabi & pickled watermelon vinaigrette) or Salade Mesclun (young market greens with shaved vegetables & red wine vinaigrette) or Rillette au Poulet (chicken rillettes with picked grapes, whole grain mustard & grilled pain de campagne)
Poiterine de Porc Braisee (braised hobbs shore bacon with marinated stone fruit, toasted faro, cherry belle radishes & pork sauce) or
Seiche a la Provencale (Sauteed European squid with new crop potatoes, roasted peppers, braised fennel & shellfish sauce) or
