About the Chefs:
Chef Aquiles Chávez is considered to be one of the best chefs in Mexico, Aquiles grew up in Tabasco, where he began working in a cafeteria at a young age. Today, he owns La Fisheria in Houston, TX, a restaurant with a focus on Mexican seafood. He has also been featured on television, in shows like “El Toque de Aquiles” and “Aquilisimo,” which are broadcast throughout Latin America. Recently, he co-created the new show “MotoChefs” with Aaron Sanchez. Aquiles is creative, fun, outgoing, and optimistic, with a passion for food and family, and his home country: Mexico.
Chef Javier Plascencia
A native of Tijuana, Chef Plascencia's charismatic personality is a direct reflection of his original and flavorful Baja Mediterranean food. He has been invited to cook for Ex-Presidents Vicente Fox and Felipe Calderón, former California Governor Arnold Schwarzenegger, and many others. Today, Javier Plascencia owns and cooks at a number of restaurants in California, supervising the restaurant design, kitchen, menu and wine lists.
Chef José Ramón Castillo
Le Guide de Creuquer du Chocolat, the premiere international guide for chocolatiers, has named José Ramón Castillo one of the best chocolate makers in the world. Castillo has received more awards than any other chef in Mexico, using 100% Mexican ingredients in his chocolate.
Chef Pablo Salas
Born in Toluca, Pablo Salas is the owner and chef of Amaranta, specializing in contemporary Mexican cuisine. He was a finalist in two top chef competitions: "El Cocinero Del Año" and "El Joven Chef.” He has also been named an official delegate on the Conservancy of the Mexican Gastronomic Culture (CCGM).
Chef Rodolfo Castellanos
Chef Rodolfo is currently considered one of the premiere figures in contemporary Oaxacan cooking. He began his career at a young age, cooking alongside his mother. In 2010 he opened Origen, a restaurant featuring Oaxacan ingredients and various modern and international techniques. Two years later, he was elected “Chef Distinción Bohemia,” one of only four people to have received this award. He was also nominated for the “Best New Restaurant” prize at the 2012 Travel and Leisure Magazine Gourmet Awards, rewarding the best of Mexican cuisine.
