I ponder this and more regularly.
Kosher requires inspection of sources, facilities, etc. It is quite intensive. Of course, a Kosher Vegan symbol/label would be great, but it would likely be cost prohibitive. There are, though, various levels of kosher certification, but some are relatively meaningless. To truly be kosher certified, a restaurant, for instance, can not be open on Shabbat as the certifying rabbi needs to be able to inspect the facility during any hours of operation.
