Chilaquiles for brunch!!!
The word chilaquiles comes from the Nahuatl language “chilaquilitl”, which mean totopos simmered in chili.
Chilaquiles ia a traditional Mexican dish made with crispy corn tortillas (totopos) simmered in a red sauce topped with red onion, cream and cheese. This delicious dish is usually served with fried beans for breakfast or brunch.
As it is very common in Mexico each region has different ways to make chilaquiles, red or green, with chicken or eggs and with different types of chilies.
