Chocinita is a traditional Mexican slow-cooked marinated pork with achiote and citric juices such as lime or bitter orange. This dish is originally from the Mayan peninsula of Yucatan in the south of Mexico, where you find the Achiote tree. The seed of the Achoite tree is called Annatto and this seed is widely used in Mexican cooking as it provides flavouring (peppery/nutmeg taste) and red colouring.
The literal translation of ‘Cochinita’ is ‘baby pig’ and the Mayan word ‘Pibil’ means ‘buried’.
Traditionally the baby pig is marinated with bitter oranges and Annatto seeds, wrapped in banana leaves and buried in an underground oven for around 7 hours.
This popular dish spread all over Mexico and there are many different preparation methods, always using Achiote seeds and lime, orange, bitter orange or vinegar for the marinade, it is usually served in a plate with beans or in a taco or tostada, etc. topped with red marinated onions and chili sauce.
