Italian, Again

The first Italian dinner was a big success, so I thought I'd do another, and this time I even have some homemade guanciale and pancetta.  The menu is a little up in the air as is the price since I want to see what looks good, but expect at least two dishes of cured pork goodness.  Here's what I'm thinking right now though:

Bruschetta
Calamari
Something using homemade pancetta
Bucatini all'Amatriciana (with homemade guanciale)
Torta Rustica
Panna Cotta with Berries and Balsamic
Another dish or two, depending on what looks good


You'll also want to bring containers for leftovers, and I'll save a spot for a new member who hasn't been to one of my dinners before.

    I couldn't find any shellfish worth using (finding live clams in Lansing seems to be next to impossible), so we'll be having spinach and cheese ravioli with a pesto alfredo sauce.

    The menu as I'm planning it now:
    Bruschetta two ways: standard and olive bread with a couple of spreads
    Bagna cauda
    Fried calamari
    Brussels sprouts with a splash of vinegar and crispy homemade pancetta
    Bucatini all'Amatriciana with homemade guanciale
    Torta Rustica
    Panna Cotta with berries and balsamic (this is assuming I can find some berries worth eating at this time of year)

    I'm also going to see if I can find some decent mussels or clams, if not I'll make some fresh pasta.
