What is Kombucha?
Kombucha is world renown as an ancient elixir, known for its many health benefits. It starts as a sweet tea, and through a magical fermentation process, becomes an extremely healthful drink, loaded with probiotics and nutrients, AND is low in sugar.
Join us with Paul "T" Tijerina, our Nutritional Therapist and kombucha brew-master, as once a month the Ganesha Cafe turns into the "buucha" Lounge.
What makes buucha special?
Our buucha is specially brewed in a charred oak barrel. And because T uses it with his nutrition clients, it is brewed to be low in sugar and loaded with beneficial nutrients and minerals that boost immune function, aid in detoxification, improve joint health, and improve digestive function.
Locally Brewed. Buucha is locally brewed in a unique, charred oak barrel, which makes it extremely fresh.
Filtered Water. Our buucha tea is made with Reverse Osmosis and Carbon Filtrated water.
Organic Ingredients. All ingredients are organic, including the organic cane sugar and juices used during the infusion phase and secondary fermentation phase.
Probiotics. Although batches of kombucha tend to have varying species of beneficial probiotics, buucha is made from a SCOBY (Symbiotic Culture Of Bacteria and Yeast) that has been blended with many different batches of kombucha over 6 years, which we believe adds to it's probiotic nutrient profile.
Macro and Micro Minerals. Buucha is infused with unrefined Himalayan Sea Salt, a trace mineral product called Concentrace, Vitamin C, Calcium, and Magnesium at strategic points in the brewing process to make a healthier brew and add to the nutrient profile.

+ Tori's Veggie WrapSpinach
confit tomatoes, sweet peppers, squash, seared cauliflower, eggplant relish, tomato almond pesto cream cheese, and a balsamic vinegar reduction sauce, wrapped in lettuce.
+ The Kale Salad
Lacinato kale, sliced chicken breast, avocado, slivered almonds, pumpkin seeds, granny smith apple, carrot, and lemon cayenne and cumin vinaigrette.
+ Quinoa Salad
Cucumbers, diced tomato, red onion, parsley, mint, lime, extra virgin olive oil
+ Home-made chili
Slow cooked grass fed beef, kidney beans, roasted chilies, tomato and garlic, topped with pepper jack cheese
About Our Menu
No GMO’s. Genetically Modified Organisms have been genetically altered and affect humans in ways not fully understood. Tori’s menu proudly excludes GMO’s.
Naturally-Raised Meats. All meats are sourced from quality vendors and at a minimum are hormone & antibiotic free. When possible, meats are purchased organic and/or pasture-raised.
Healthy Fats. No industrial seed oils here. Fats cooked with are traditional, wholesome, and nutrient-dense such as real butter and organic cold-pressed coconut oil.
Full Fat Dairy. Full-fat dairy products can be extremely healthful for those that tolerate them. Our cheeses, yogurts, and creams are always hormone & antibiotic free.
Grain Free. Many seeds can be difficult for most humans to digest. Grains, in particular have antinutritional factors that can cause problems for the digestive system and contribute to allergies, asthma, and other immune conditions. Gluten found in wheat is a great example of an antinutritional factor.
Properly Prepared Legumes. Legumes can be extremely healthful if prepared properly to mitigate antinutritional factors. Nothing canned here! All of Tori’s bean recipes include traditionally soaked legumes.
Vegan Options. For those looking to sport a totally vegan approach, our vegan options are delicious, nutrient-dense, and made with quality ingredients.
Quality Produce. Most of the produce is locally sourced and every effort is taken to purchase organic and from local farmers when possible.
Chef Tori Nakano Cautela started cooking years ago in some of Arizona's finest fine dining/Mobile 5 Star restaurants. Tori trained with some notable and talented chefs throughout the years, such as Chef Alessandro Stratta formerly at Mary Elaine's at the Phoenician Resort in Scottsdale, the Mirage and Wynn Las Vegas. One of her early mentors was Chef Christopher Gross, from Christopher's in Scottsdale's Arizona Biltmore Fashion Park. She co-owned a catering company in the Hudson Valley region of NY, then later became the opening Executive Chef of Whole Foods in the first store to open in Vegas. Tori has owned her own private chef company and also developed a culinary program for a local cooking school. Chef Tori found it her passion to teach regular people how to manage their home kitchens and showed them how easy it was to plan great and healthy meals for their families. She also orchestrated plenty of fun corporate team building seminars by letting co-workers learn to cooperate and have fun while making great food! Tori is known for her healthy food, keeping food simple and bringing out the rich and great flavors by starting with great product then combining the science of cooking with her passion to be creative. You will most likely always see a smile on Tori's face especially when she gets to be around food!
